Thai Green Curry Beef


An incredible array of exotic flavors all combined to create a mouth-watering dish that can be enjoyed spicy or not, Thai Green Curry Beef is a recipe that will have you coming back for seconds!

Ingredients
1 lb boneless beef sliced into thin strip
1 tsp sesame oil
1 tsp vegetable oil
1 onion cubed
1 carrot chopped
1 large stalk celery chopped
1 green pepper chopped
1 1/2 tbsp Thai Green Curry paste
1 14oz can coconut milk
2 sprigs of coriander for garnishing
salt and pepper to taste

Method
1) Heat oils until really hot and drop the meat inside a large skillet.
2) Sear the meat until the pinkness is gone, just 2 minutes and remove from pan.
3) In the juices left in the pan, put in the curry paste and stir quickly to prevent it from burning.
4) After a minute, pour in half the coconut milk and stir. Season to taste.
5) Once the mixture has come to a boil, add the beef and veggies, cooking for 5-6 minutes
6) Add the rest of the coconut milk a little at a time until it is all used up and cook it down to the consistency you like (I like mine relatively dry).
7) Before serving, garnish with some chopped coriander leaves.
