Stir Fried Beef With Vegetables

There is something about stir fries that call to food lovers. I think it is the combination of fresh, crisp veggies, a tasty, sticky sauce and the smoky flavour that only comes from using a very hot stove. An item this tasty, its hard to tell that its so easy.

The secret to a perfect stir fry is to chop all the ingredients and mix the sauce beforehand so that once the stove turns on, the whole thing is done in just a few minutes. Another thing to keep in mind is to slice your meat really thin so that it seals quickly.

Ingredients
2 tbsp ground nut or peanut oil
1 lb boneless beef sliced thinly
1 medium onion cubed
1 tbsp chopped garlic
1 green pepper cubed
1 large head of broccoli divided into florets
3 baby bok choy opened up
handful white button mushrooms sliced
1 large carrot julienned
2 tbsp soy sauce
1 tbsp oyster sauce
1/4 cup chicken stock
2 tbsp sugar
2 tsp cornstarch mixed with one tbsp water
salt and pepper to taste

Method
1) In a very hot wok or pan, drop in the oil and the meat. Allow to seal stirring often to make sure it doesn't stick to the bottom
2) Once the meat is sealed, Add garlic, onion, broccoli and carrots and fry stirring often for 2-3 minutes.
3) Once these veggies have sweated out, add the rest of the veggies and let them go for 3-4 minutes.
4) In a separate bowl mix the soy sauce, oyster sauce, chicken stock, sugar and salt and pepper and pour that into the pan.
5) Cook for another 2 minutes or until the sauce has reduced and is relatively dry.
6) Add The cornstarch slurry and cook until shiny and thick.
7) Serve with plain or fried rice
