Achaari Daal-Lentils with Pickle


Lentils are a very healthy way of adding protein to our diets. They lack the bad cholesterol that red meats have and are a nice change from white meat. There are many different types of lentils and they are so versatile, they can be incorporated into many different recipes from different types of cuisines.

This particular dish uses indian spices to create that extra depth of flavour that can take theses simple red lentils to that next level. The achaar or pickle I used was made from mango and can be found in any indian grocery store. This goes really well with plain rice and is best served piping hot!

Ingredients
1 tbsp cooking oil
1 cup red lentils washed until the liquid runs clear
4 cups water
1/2 med onion chopped
1 clove garlic chopped
1-2 green chillies
1/4 tsp turmeric powder
2 tbsp mango pickle
salt to taste

Method
1) In a saucepan, heat the oil and throw in the onion.
2) Once the onion is brown, add the garlic and saute for about a minute before adding the green chillies and washed lentils.
3) Add the turmeric and salt and fry everything for a minute before adding the water.
4) Once the water comes to a boil, you will see foam coming to the top. Skim that off with a spoon and turn down the heat to a medium and simmer for 15 minutes.
5) After 15 minutes, your lentils should be soft and the liquid should be thick and not runny.
6) Stir in the achaar and cook for a further 5 minutes.
7) Serve with steamed rice and enjoy!
